What if the sea was the most mysterious of cellars?
Fifteen meters below the surface, in the silence of the seabed of Saint-Malo Bay, our rums underwent a unique experience: nearly a year of immersion in the heart of Saint-Malo Bay.


An adventure born from over 25 years of expertise

For these unprecedented experiments, our team of Armateurs de Rhum was fortunate to be supported by the Association de l’Immersion des Vins en Baie de Saint-Malo, which boasts more than twenty years of expertise in underwater aging.
Thanks to this extensive experience, and the invaluable support of sommeliers, wine merchants, and wine professionals, we have been able to develop a unique method of bottle aging, this time applied to our rums.

Inspired by practices from the world of wine, we are exploring a new path for spirits: allowing rum to age in bottles, and no longer just in barrels, in order to observe and understand how the sea changes its evolution.
Compared to traditional aging in cellars, marine aging reveals unexpected nuances—between tension, freshness, and roundness.


Exceptional triple aging

This unique vintage underwent three stages:

  • Three years under the sun of the French islands, where rum is infused with tropical heat and wood.
  • Six months in Saint-Malo, in our ocean cellar, for controlled maturation on land and preparation for underwater aging.
  • Nearly a year under the sea, at a depth of 15 meters, where pressure, tides, and constant temperature become full-fledged partners in aging.

The result is a remarkably smooth rum with spicy and toasted notes, a supple and intense nose, and a fresh palate. A rare sensory experience, combining earth, sea, and expertise.


A rare edition, a comparative experience

Only a few bottles are submerged each year, offered individually or in a comparative box set with their non-submerged counterparts—for a tasting that highlights the difference between the sea and the cellar.
Each sip tells a story of exploration, innovation, and a deep attachment to Saint-Malo tradition.
And already, one question is on our minds: what will the next immersion reveal?
